Eggplant with Pork - Easily Made in the Microwave

We got a lot of eggplants as a gift, so I made this.
Since the flavors will be absorbed by the eggplants while they are microwaved, make sure to mix the flavoring ingredients together well before pouring it over. Recipe by Yu-ko

Cooking Instructions

Take the stem ends off the eggplants and cut in half lengthwise. Cut a crisscross pattern over the skin side of each eggplant half.

Soak in water to remove the bitterness. 3 minutes is fine!

Combine the A. ingredients.

Drain the eggplant slices. Make a slit from the thick bottom up to just below the stem (don't cut through).

Cut the pork slices in half, and stuff into the the slit of each halved eggplant.

Lay the eggplants in a heatproof dish, alternating the direction as shown. Give another mix to the combined A., and pour it over the eggplants.

Cover loosely with plastic wrap, and microwave for 7 minutes at 600w. Done!

Scatter finely chopped green onion to add color!
