Cooking Instructions

Prepare the ingredients:
1/ Cut the eggplants into pieces 2 1/2 inches long and 3/4 inch wide. Soak in lightly salted water for 15 minutes, then drain and squeeze out excess water.
2/ Finely chop the green onions, garlic, and chili pepper. - 2
Add cooking oil to a pan and fry the eggplants until they are soft. Remove the eggplants and set them aside on a plate for later use.

In the same pan, add chopped garlic and sauté until fragrant. Then add the ground pork and chopped chili pepper, and stir-fry until cooked.

For the sauce: Mix 2 tablespoons oyster sauce, 2 tablespoons soy sauce, 2 tablespoons chili sauce, 1/2 tablespoon sugar, 1/3 teaspoon salt, 1/2 tablespoon seasoning powder, and 3 tablespoons water. Add the sauce to the stir-fried pork.

Finally, add the fried eggplants back into the pan and stir well for about 2 minutes. Turn off the heat and sprinkle with green onions to finish.
