Japanese Shrimp Gyozas

This is the recipe we cooked yesterday at the 🏡 Cookpad Home Academy 🏡 workshop, and they turned out delicious! Some of us chose the shrimp ones, others went for the meat, and some opted for the vegan version with textured soy. You can see how they turned out in the "Cooksnaps" section at the very end of the recipe.
Are you up for it?? 😄

I recreated the unforgettable Ham Sui Gok I had at a dim sum food stall in Hong Kong. This is my original recipe. My colleagues loved them. One of the guys said it was so good he wanted to make some for his wife!1) Make sure you add the boiling water to the flour little by little and not all at once (it might get very sticky)2) Make the wrappers at least 5mm thick when you wrap the fillings. It may shrink and get flat later when they are too thin. Recipe by Monakasan cookpad.japan -

[Farmhouse Recipe] Gyoza Dumplings with Wings [Farmhouse Recipe] Gyoza Dumplings with Wings
I had a lot of cabbage, so I used a lot of it to fill these gyoza dumplings. The cabbage is salted, which prevents the dumplings from getting soggy. To make the '"wings," use 100 ml of water to every teaspoon of flour. Add enough flour-water so that 1 cm of the gyoza dumplings are immersed in it.When the dumplings are done, invert a plate over the frying pan and flip the whole thing over to transfer cleanly. Chinese Chive and Egg Gyoza (A Chinese Home Recipe) Chinese Chive and Egg Gyoza (A Chinese Home Recipe)
This is a recipe that I learned from my parents-in-law who came all the way from China to help me with my birth. I like crispy skins, but the authentic way of cooking these is to cook until slightly golden brown, and add lots of water to steam, and cook into a soft skin.Make sure to use hot water when kneading the flour. You can use cold water when making boiled gyoza, but the point to make pan-fried gyoza seems to be to use hot water. The skins will fall apart when boiling if you don't knead with cold water when making boiled gyoza. It's also a point to mix the salt into the eggs while still raw when making the scrambled eggs. The eggs release extra moisture and become watery if you make the scrambled eggs and then add salt. Using just enough oil to make the filling shiny should be sufficient when adding oil. Boiled Gyoza Dumplings With Slippery Smooth Homemade Skins Boiled Gyoza Dumplings With Slippery Smooth Homemade Skins
Boiled gyoza dumplings just have to be made with homemade skins...Thoroughly squeeze out the moisture from the cabbage and leek. Roll out the dough for the skins very thinly. Aim to make them 1 mm thick. The skins don't have to be perfect circles! The thickness is more important than the shape. Chinese chives aren't added to the filling. If you want some, just add a tiny bit. Recipe by Cooking S Papa cookpad.japan
