Easy Cassata

The cassata that I had at a restaurant was so delicious, so I made an easy version at home.
Use any of your favorite dried fruits, nuts, or chocolate!
I recommend cranberries because they have just enough tartness.
Add cream cheese to the heavy whipping cream, and your cassata will have a really authentic taste. Recipe by Ryo---ko

I was searching for a way to use my homemade mock ricotta cheese. I have experimented with a lot things with this ricotta cheese, like baking baked cheese cake, so this time I decided to chill it...Traditionally, dried fruits soaked in rum would be used for cassata. But since I had ume plums leftover from umeshu sitting in the fridge, I tried using them instead...I love this cassata because it doesn't melt easily like ice cream.. Cassata with Plums Left Over from Umeshu Cassata with Plums Left Over from Umeshu
I had some leftover plums from umeshu that I didn't know what to do with, so I added them into cassata. It tasted even better than I expected, so I uploaded the recipe. I love cassata, but I'm not crazy about dried fruits, so I like this recipe better.Freeze until the plums are slightly frozen, but soft. If you want to retain the texture of the plums, cut them bigger. You don't need to chop the nuts finely, since you'll be slicing the cassata when serving.Another liquor can be used instead of umeshu. They feed a crowd or a couple for several nights. I used ham in this one, but I've also used tuna, ground turkey and ground chicken. Veggies can be fresh, frozen, or canned..... I've used broccoli, cauliflower, peas, lima beans, mixed veggies, corn, green beans, etc. **Just an FYI - Campbell's makes 3 cream soups 98% fat free, mushroom, chicken and celery - so you have lots of flavor combos to try out** Living Without A Gallbladder -

Baked Cassava Cheese Baked Cassava Cheese
Cassava/Tapioca Cake, a very popular traditional cake known as Bingka Ubi Kayu in Malaysia, Singapore, Brunei and Indonesia, is usually baked or steamed in coconut milk and contains no cream cheese. This baked cassava cheese is a fusion version of the traditional ones. It is less sweet, soft and springy. Omit the flour if a gluten-free version is preferred. Thickened cream can be replaced with coconut cream and adjust sugar accordingly. I only use the frozen type from Asian Grocery store as fresh Cassava/tapioca is not widely available in Western Australia.Use either fresh or store bought cassava, it makes no different. This recipe requires no straining or squeezing of grated cassava. It’s very much straightforward.Note : Recipe is in Australian Standard Metric measuring tools (cups, spoons and weighing scale)#mycookbook#cake#steamedcake#cassava#starch#tapioca#ubi#dessert#teatime#bingka#ubikayu#kuih#cheese#kek#breakfast#lunch#dinner#asian#malaysian#sweet#Christmas#newyear Pinkblanket's Kitchen
