Ingredients

35 minutes
4 servings
  1. 2 cupsfinely cut red cabbage
  2. 1 cupfinely shredded carrots
  3. 1/2 cupboiled green peas
  4. 1/2 cupchopped spring onion
  5. 1/2 cupcut coriander
  6. 1/4 cupground salted pea nuts
  7. 1/2 cupcooked barnyard millet or quinoa
  8. 2 tablespoonssesame oil
  9. 2 tablespoonspeanut butter
  10. 1 tablespoonsoya sauce
  11. 1 teaspoonvinegar
  12. 2 teaspoonshoney
  13. 1 pinchblack pepper
  14. 1 teaspoonlemon juice
  15. Small quantity of ginger
  16. Salt and chilly flakes for taste

Cooking Instructions

35 minutes
  1. 1

    Place peanut butter in a bowl and add sesame oil, soya sauce, vinegar, honey, ginger, black pepper, chilli flakes,salt & lemon juice. Stir well to prepare the salad dressing.

    Place in a bowl shredded red cabbage, Carrot, green peas, spring onion, cooked barn millet (or quinoa), coriander and mix thoroughly

    Add salad dressing and mix well.

    Sprinkle crushed salted peanuts, some cut spring onion on top and serve the salad.
