Cream Cheese Raspberry Cake Made with Pancake Mix!

I've tried making many kinds of cake with pancake mix, and this has been the best.

Ingredients

4 servings
  1. 1Cream cheese
  2. 1Fruit granola
  3. 1Raspberry jam (or strawberry jam)
  4. 200 gramsPancake mix
  5. 100 mlMilk (or soy milk)
  6. 60 gramsButter (margarine)
  7. 1Egg

Cooking Instructions

    Mix together the egg and milk. Add in the pancake mix and butter (melted in the microwave at 600w for 30 seconds) and combine thoroughly.

    Add the fruit granola and raspberry jam. Mix well to make sure the granola blends with the batter.

    Once the jam is mixed in, cut the cream cheese into cubes and lightly mix into the batter.

    Pour the batter into a mold lined with baking parchment. If you grease the paper with olive oil, you'll get a nice, baked finish.

    Put jam and cream cheese on top like in the photo, and bake for 45 minutes at 170℃. Check it to make sure it doesn't burn.

    Let it cool once it has baked. Once it has cooled, remove it from the mold and leave it to harden.

    All you have to do now is slice the cake once it has cooled completely! Try spreading some heavy cream, or sandwiching the cream between slices -- it's really tasty!
