When my husband's family in Kumamoto makes 'Toshikoshi soba' (New Year's Eve soba noodles), they make this "Meat Soba". It tastes just like mom's cooking.The burdock root tastes more delicious if you don't peel it or soak it (try it and you'll understand!).When you add the seasonings, add the sugar first, before the soy sauce (the molecules in the sugar are bigger than the ones in the soy sauce, so the meat takes longer to absorb the sugar).The flavor is pretty strong. Just wanted to try some udon so I made it myself lol. Came out really good, especially the broth. If you don't care for or have udon noodles (found in the deli/refrigerator section) just use ramen noodles.

È un piatto della tradizione, a base di ingredienti semplici, l’impasto è di carne e pane raffermo ammollato, le proporzioni sono 50/50, questo oggi.Perchè una volta tanto tempo fa la carne era un privilegio, veniva mangiata una volta a settimana quando andava bene, per cui l’uso era di “supplire” con tanto pane.I restanti ingredienti sono aglio, prezzemolo, pecorino grattugiato ( oggi si usa mescolarlo con del parmigiano per smorzarlo un po'), sale e pepe.Le polpette vengono poi fritte e consumate così, o annegate in sugo di pomodoro semplice, in modo da poter diventare sia primo che secondo.È forse il piatto che più di tutti sa di amore sotto forma di cibo, cucinatele a chi amate.#ricettebase
