Whisk ingredients for the cream and put on heat to till it thickens

Turn cream into blender add all ingredients for the puree and blend till smooth

Pour your cooked Mac in a baking dish, pour in your puree, sprinkle fennel seed, break in eggs and sprinkle black pepper put in the oven for 20 minutes on medium heat

Serve while hot..so delish😋

This recipe is inspired by three things: what was on hand, a recipe my mom made called Waikiki Meatballs, and a frozen Eating Right meal I used to enjoy called Black Bean Pineapple Chicken. I also looked at several recipes online for Jerk Chicken and Caribbean Chicken to get ideas for the spices. I added some spices to the sauce, cinnamon and ground ginger; and some to the rice, quinoa, bean mix including curry, all spice, ground nutmeg, and turmeric, but you could divide it up however you want or put all the spices in one and not the other. Next time I will have to try adding one small diced onion and a can of diced green chilies. I meant to add it this time but forgot! This would also look nice with carrots and/or red bell pepper, or any other color bell pepper for that matter! Veronica Hein -
