Ingredients

  1. 300 gmmalabar spinach (washed and stems included)
  2. 1/4quarter yellow pumpkin (cube-cut)
  3. 2potatoes (peeled and cube-cut)
  4. 2 tbspginger paste
  5. 3-4slit green chilis
  6. 2 tbsproasted cumin powder
  7. 2 tbsproasted coriander powder
  8. 2 tbspturmeric
  9. 2 tbspindian five spice blend (cumin, nigella, fennel, mustard, fenugreek)
  10. 2bay-leaf
  11. 4-5 tbspmustard oil

Cooking Instructions

    Wash the leaves well in advance, soak in boiling water for sometime for stem to be tender. Remove and pat dry.

    In a flat bottomed pan, pour in mustard oil to get heated, temper the five spices until it splutters. Add in the vegetables one by one, potatoes first followed by melon. (Can add more veggies like, eggplant, flat beans of your choice).Stir fry the vegetables.

    Add in the ginger paste, cumin and coriander powder and mix well. When the potatoes and pumpkin soften add in the spinach and keep turning over. Cover and cook for some more time. Serve with white rice.
