Ingredients

  1. 250 gramspumpkin, weight after peeling
  2. 1 cupcoconut milk (1 pack of Kara 65 ml + water)
  3. 2/3 cupgranulated sugar (about 125 grams)
  4. 1 cupall-purpose flour (about 125 grams)
  5. 1egg
  6. 1/4 tspvanilla
  7. 1/4 tspsalt
  8. 3 1/2 tbspmargarine, melted (about 50 grams)
  9. Raisins for topping (can also use chocolate chips or cheese)

Cooking Instructions

    Steam the pumpkin until cooked, then mash with a fork.

    Beat the granulated sugar and egg until slightly pale and small bubbles form. Add vanilla and salt, mix well.

    Add coconut milk, mix well. Gradually add all-purpose flour, mix well.

    Add the pumpkin. Mix well. Finally, add the melted margarine, mix until completely smooth.

    Heat the mold. If using a non-stick mold, no need to grease with margarine. Pour the batter to 3/4 full. Cover, cook on low heat until half-cooked.

    Once half-cooked, add the topping. Cover again, cook until fully cooked (edges are browned and the top has hardened). Remove and let cool. Serve.
