Pinto Beans and Saffron Rice Pinto Beans and Saffron Rice
A certain amount of fat has to be in our diets daily. Transfat is not good but it's only produced when vegetable oils hardens it's called hydrogenation. Hydrogenated fats, or "trans fats," are often used to keep some foods fresh for a long time.Trans fats are also used for cooking in some restaurants. They can raise LDL cholesterol levels in your blood. They can also lower your HDL (good) cholesterol levels.Animal fats like drippings and lard doesn't this. They help absorb vitamins A, D, E, and K. The fats your body gets from your food give your body essential fatty acids called linoleic and linolenic acid. They are called "essential" because your body cannot make them itself, or work without them. Your body needs them for brain development, controlling inflammation, and blood clotting. This information came from the U.S. National Library of Medicine. This is why I try and use vegetable oil as little as possible. The only oils I like to really use is olive, coconut, peanut and lard. The price and affordability is the only reason I use vegetable oil. I absolutely will not use canola oil as it does indeed cause heart lesions over a period of years of use. skunkmonkey101 -

Shorty's Red Beans and Rice Shorty's Red Beans and Rice
Traditional red beans and rice. Classic Cajun dish traditionally served on Mondays... Which was because ladies let the beans simmer all day while doing laundry.THIS WILL TAKE ALL DAY, but it’s worth it! You can do some prep that will save you some time. It takes about 5hrs to COOK but the prep (chopping and bean soak) takes about an hour.Start 10am if you’ve done zero prep.Start at noon if you’ve prepped the beans and chopped the veggies and andouille sausage. This freezes really well, so it’s a great dish to make a double-batch and freeze in smaller containers for several later meals. Adzuki Beans and Rice Steamed in a Rice Cooker Adzuki Beans and Rice Steamed in a Rice Cooker
Making it in a rice cooker instead of a pot is easier, so we prepare rice and adzuki beans this way quite often in my house.Step 4: Depending on the adzuki beans you use, the boiling time required may be more or less, so make sure to monitor the beans while boiling.Step 5: If you use a lot of the adzuki boiling water when making the rice, the rice will be colored. Feel free to add more adzuki beans to the dish if you like.Make a lot of boiled adzuki beans, put the beans and the water they were boiled in in separate resealable bags and freeze to have them ready to go next time. Monday Red Beans and Rice Monday Red Beans and Rice
In the New Orleans area, Red Beans and Rice is a tradition on Mondays. In times past, leftover meats from Sunday became part of the recipe for Red Beans and Rice. Since there are no leftovers in my house, I have come to rely on Andouille sausage and ham chunks for the meat ingredients. I take short cuts because traditional southern recipes can be an all day long affair for which I do not have time. alley927cat -
T' Jim's New Orleans Red Beans & Rice T' Jim's New Orleans Red Beans & Rice
"I love you once, I love you twice. I love you more than red beans and rice.", so they say here in Louisiana. There is a common misconception that this dish is Cajun, but in fact; it is more Creole/New Orleans that has Cajun influences. Typically back in the old days, red beans and rice were always made on Monday because that was "Wash Day" and housewives could put on a pot in the morning and let them simmer all day while they attended to the wash.
