A dear friend of mine shared her grandma's recipe, Tatianas grandma's pink beans long ago and I posted it here. Well I fell in love with pink beans so this is for Tatiana and her grandma. Thank you for sharing so much in my life!!!

Pink Beans, Rice and Chicken; Oven

Ingredients

2-4 servings
  1. 15 ouncecan of pink beans
  2. 1/2 cupground paprika
  3. 2-2/3 poundchicken breast
  4. 1-1/2 teaspooncelery salt
  5. 1 teaspoongranulated garlic powder
  6. 1 teaspoononion powder
  7. 1/2 teaspoonsalt
  8. 1/2 teaspoonseasoned salt
  9. 2 cupwater
  10. 1 cuprice
  11. 1 stickbutter

Cooking Instructions

    Preheat oven 400 degrees Fahrenheit

  2. 2

    Split the breast lengthwise, one side will have more of the skin the other half will have the bone.

    Season both sides with half the garlic, all the celery salt, and 1/3rd of the paprika.

    Add the rice to an oven safe skillet, with the butter and the rest of the paprika and garlic. Sauté the rice in the butter and spices.

    After 7 minutes of sauté scrap the rice into the middle of the large skillet. Add the breast and spread out the rice between and in the middle of the skillet. Add the water.

    Remove the seeds and ribbing of pepper. Dice the jalapeño

    Add the beans and jalapeño pepper.

    After it has boiled on the stovetop a total of 12 minutes put into oven for 40 minutes. Temperature of the chicken was 165 degrees Fahrenheit.

Omg. I made this last night. I dont think I can eat store bought spanish rice again. I ran out of Jalapeños but I saved the juice the other day ( made mexican corn bread yum? So I added some of the juice, and it was a layered bud of tastes... I also dont keep celery salt, so I cut up and sauted some celery, added a little chili seasoning, and I am addicted to smoke peprika, so that's what goes in my seasoning mixes. This will be maybe a 1 x a week meal it was soooo good. Thanks for sharing. I took a photo, but there was no place to add it in my comment
