Basic Madeleines

It's an easy and simple butter cake that is great for picnics.

- They are actually tastier after sitting in a plastic bag overnight than right after they are baked.
- You can add cocoa powder to make a chocolate version.
- If you want to make an Earl Grey tea version, omit the vanilla extract and add 1 teaspoon of ground Earl Grey tea leaves. Recipe by OZCOOKING

Ingredients

12 servings
  1. 2Eggs
  2. 100 gramsFlour
  3. 90 gramsSugar
  4. 1/2 tspBaking powder
  5. 100 gramsUnsalted butter
  6. 1 dashVanilla extract

Cooking Instructions

    Sift together the flour, sugar and baking powder into a bowl. Add the eggs and combine (do not whip).

    Melt the butter in a pot, taking care not to burn it.

    Add the melted butter to the batter and combine with a wooden spatula. Add vanilla extract.

    Coat the madeleine pan with vegetable oil or butter and pour in the batter. Bake at 180℃ for 10~12 minutes.

    Remove the madeleines from the pan when they are still warm and place in a plastic bag. This will make them nice and moist.
