Authentic Dan Dan Noodles

I bought some delicious noodles and doubanjiang in Yokohama, so I wanted to make authentic dan dan noodles. I looked at a lot of recipes, and did a lot of experimentation to come to this.

Ingredients

2 servings
  1. 150 gramsGround pork
  2. 2 tspDoubanjiang
  3. 1 tbspSake
  4. 800 mlWater
  5. 2 tsp○ Weipa
  6. 3 tsp○ Tianmianjiang (Chinese sweet bean paste)
  7. 1 tsp◎ Grated garlic
  8. 1 tsp◎ Grated ginger
  9. 2 tbsp◎ White sesame paste
  10. 1 tbspPeanut butter
  11. 1 tbspVinegar
  12. 1 tbspSoy sauce
  13. For the toppings:
  14. 1/2Finely chopped green onion
  15. 1Bok choy
  16. 2 tbspGround white sesame seeds
  17. 2packs Chinese-style noodles

Cooking Instructions

    Heat up a frying pan and stir fry the pork without adding any oil. When the color of the meat changes add the sake and doubanjiang and continue stir frying.

    Add the ○ ingredients and blend well.

    Add the ◎ ingredients to the pan and mix well. The soup is now finished.

    Split the bok choy lengthwise into 4 to 6 pieces, and boil in salted water.

    Bring plenty of water to a boil in a pot and cook the noodles.

    When the noodles are done, drain them well, Immediately transfer to serving bowls, ladle in the heated soup, top with the cooked bok choy, chopped green onions and ground sesame seeds. It's done!
