I have soup everyday it is my way of eating enough veg and I find it comforting but is must be served piping hot.
I bought a ready packet of veg their where discounted. I add a few bits and made this soup.

Ingredients

  1. 2parsnips
  2. 6tomatos
  3. 1onion medium
  4. 2 clgarlic
  5. 1 cmginger root
  6. Stalkes of a bunch of coriander
  7. 70 grtomato paste
  8. Few drops of tabasco
  9. 1 tboil
  10. 1,5 lveg stock from cubes or fresh
  11. Some parsley and vegan cream to garnish

Cooking Instructions

    Cut the onion,garlic and ginger.

    Sweat in oil till tender but not brown

  3. 3

    Cut the parsnip into medium pieces and add

    Add the tomato concentrate

  5. 5

    Cut the tomatoes into 8. Add.

    Cover with stock

  7. 7

    Cook for 15 min and add stalks

  8. 8

    Cook until tender and mix.

  9. 9

    Serve with some drops of cream and parsley
