Ingredients

  1. 8nice plump tomatoes
  2. 3/4 cupsmall diced celery with some of the leaves
  3. 3/4 cupsmall diced onion
  4. 3 cloves of fresh garlic minced
  5. 1 tspolive oil
  6. 1/2 cupmarsala/red cooking wine
  7. 1/2 tspsalt or to taste
  8. 1/2 tspwhite pepper/pepper
  9. 1Sugar to taste if desired
  10. 1/2 tspbaking soda
  11. 1/2 cupcream, optional
  12. 2or 3 fresh basil leaves julienned

    Clean tomatoes and cut into quarters and puree in blender, leave in blender

  2. 2

    Meanwhile, heat olive oil in saucepan on low-med heat, saute celary and onions then add the garlic.

    If you want your soup chunky add tomato puree to saucepan. If you want smooth soup add saute mixture to blender and puree all together to desired texture

    Pour puree into saucepan, rinse blender with a bit of water and add to saucepan. Add red wine and simmer for 10 min or so

  5. 5

    Add salt and pepper to taste

  6. 6

    If you desire it creamy, remove from heat, stir in the baking soda (it will foam a bit) then slowly add the cream and stir.

    Garnish with basil and ENJOY!
