Soup with A Soft Whole Tomato

I make tomato consommé soup quite often, but I really liked the texture of the tomato when I used a whole one.

It tastes better if you simmer at low heat for 30 minutes, let it cool then reheat as the taste will soak in.
It's also great as a chilled tomato soup. Recipe by FarmersK

Ingredients

4 servings
  1. 2Tomatoes
  2. 1Grated cheese
  3. 1around 6 leaves Basil leaves
  4. [A]
  5. 800 mlWater
  6. 3Consommé cube
  7. 1/2 tspSalt
  8. 1Coarsely ground black pepper

Cooking Instructions

    [Parboiling the tomatoes] Remove the blossom ends with the tip of your kitchen knife.. Place the tomatoes in boiling water for 20 seconds, remove and place into cold water.

    Remove the skin. It will come off really easily.

    Boil [A] in a saucepan and place the tomatoes in carefully. Simmer for 30 minutes. Pour the soup over the tomatoes occasionally.

    Transfer to a serving plate, sprinkle on finely chopped basil and grated cheese and it's done. The tomato will be really soft, so you can eat it with a spoon.
