Refreshing Grapefruit and Daikon Radish Salad

You can make a refreshing salad with what you have on hand.
My husband isn't a fan of vinegary stuff, so I thought I should make it fruity and he loved it.

If zucchini isn't in season, you could use cucumbers This time, I served it with a bit of red and yellow peppers.

Ingredients

2 servings
  1. 5cm Daikon radish
  2. 1Grapefruit (pink)
  3. 1/2Zucchini
  4. 1 tbspOlive oil
  5. 1 tbsp◎Wine vinegar or lemon juice
  6. 1 tbsp◎Honey or sugar
  7. 1 dash◎Salt and pepper

Cooking Instructions

    Cut the daikon radish into 2-3 mm thick wedges, thinly slice the zucchini, sprinkle with salt and let sit for 10 minutes. Squeeze out the excess water.

    Remove the flesh of the grapefruit from the peel and cut into large pieces. Peel it into a bowl to prevent wasting any remaining juice.

    To prepare the dressing, combine the ◎ ingredients together and mix until even Add the olive oil and mix well.

    Toss the daikon radish and zucchini with the dressing. Add the grapefruit, mix, and enjoy. It's delicious when chilled.
