If you add lime juice and salt to onions it only takes 30 minutes for them to transform into a lovely tangy, bright pink relish with none of the harsh flavour of raw onions.

A quick way to brighten up tacos, sandwiches or wraps, yesterday's veggie chilli, or your Sunday brunch shakshuka 🥰

Quick pickled onions

Ingredients

  1. 1red onion
  2. juice from 1/2 lime
  3. sea salt

Cooking Instructions

    Peel and very finely slice the onion.

  2. 2

    Squeeze over the lime juice and add a good pinch of salt.

  3. 3

    Give it all a good squeeze for 20 seconds or so, then set aside for 30 minutes to soak

    After 30 minutes you'll see the onions are softer, some of its water released and a brighter pink colour.

  5. 5

    Give them a final squeeze. Pour out any water from the bowl into the sink.

    Enjoy with tacos! 😋
