Ingredients

2 people
  1. 1 cupbasmati rice
  2. 250 gramsbaby spinach leaves
  3. Olive oil
  4. 2small red onions
  5. Salt and pepper
  6. cubeVeggie stock
  7. Juice from half a lemon
  8. Zest of one lemon

Cooking Instructions

    In a pan on medium high heat cook the onions with salt, pepper and veggie stock until caramelised (5 min)

    Add your rice and mix well - it might look the rice is sticking to bottom but keep stirring for 1 min.

  3. 3

    Add spinach and stir some more.

  4. 4

    Now cover with water completely and cook for 15 min.

  5. 5

    Once water is reduced add lemon zest and lemon juice and stir, add some salt according to your taste.
