My favorite type of jollof rice especially paired with pepper soup

Ingredients

  1. Per boiled rice (desired amount)
  2. Beans (ratio of rice and beans should 2:1)
  3. Tomato paste
  4. Tomatoes, red pepper, attarugu (blended)
  5. garlic, ginger (crushed or powdered)
  6. Seasoning
  7. Chopped onions
  8. Jollof rice spice
  9. Preferred protein with stock

Cooking Instructions

    Per boil your rice&beans and set side

    In a pot pour oil add onions sauté lightly and slowly add your blended vegetables and tomato paste (make sure the two are well mixed)

    Fry for at least 10 minutes. Add your seasoning and spices and your protein

  4. 4

    Because our rice&beans are already per boiled, we’ll pour in only a small amount of water and our stock

  5. 5

    Bring it to boil then add rice and beans and stir with a spatula

  6. 6

    Cover rice with either foil paper or nylon before covering with pot lid. Bring it a cook on low heat.
