Ingredients

2-3 servings
  1. 1-2 tablespoonsolive oil
  2. 1-2 tablespoonsbutter
  3. 1 tablespoonshallots, minced
  4. 3-4 clovesgarlic, sliced or minced
  5. 1/4 cupwhite wine or chicken or vegetable broth
  6. 1large handful of leafy greens (spinach or super greens or baby kale)
  7. 1/8 teaspooncrushed red pepper flakes (to taste)
  8. 1 poundraw shrimp, medium size, shells removed
  9. 1/2 teaspoonsalt (to taste)
  10. 1/2lemon to squeeze over finished dish
  11. Serve with steamed rice, pasta or crusty bread

Cooking Instructions

    Melt butter and olive oil together in medium skillet.

    Add shallot and garlic and saute for 1 minute.

    Add leafy greens, cook for 2-3 minutes until wilted and soft.

    Add wine or broth and red pepper flakes. Simmer for a few minutes.

    Add shrimp and cook until they turn pink on both sides, about 3-4 minutes. Season with salt and pepper.

    Squeeze juice of 1/2 small lemon over top and serve with rice or pasta or crusty bread. Enjoy!
