Ingredients

  1. 1 cupbasmati rice
  2. 2medium beetroot grated
  3. 2 cupswater
  4. 3big carrots grated
  5. 2whole scotch bonnet
  6. Cardamom
  7. star anise
  8. coriander
  9. cinnamon stick
  10. bay leaf
  11. Seasoning
  12. mix spices
  13. Sweetcorn
  14. raisins
  15. cashews nuts(optional)

Cooking Instructions

    In a pot add 4 tbspn oil, bay leaf, star anise, cinnamon stick, cardamom, cloves, coriander (feel free to omit any you don’t like) fry and add soaked(for 30 mins) and fry too for about 2 min

    Add 2 cups of water and add seasonings, coriander powder, mixed spices, scotch bonnet in whole and any spice of choice stir and cover with foil paper then close pot properly. Use low heat Please

    For about 15-17 mins(water about to drain) open and add grated beetroot and grated carrots

  4. 4

    Add small foil paper and add coal then put oil on coal for that smokey scent cover immediately to trap the smoke

  5. 5

    Remove coil after it’s done and gently stir not all but partially to give that color. Serve with sauce or chicken. I served mine with tandoori chicken
