Ingredients

  1. 1 CupWater
  2. 2/3 CupApple Cider Vinegar
  3. 2 TablespoonsGranulated Sugar
  4. 2-3Cucumbers Peeled and Sliced into 1/4" Coins
  5. 1Medium Onion Thinly Sliced
  6. 1Small Bell Pepper Cut into Thin Strips
  7. 1Small Yellow Squash Cut into 1/4" Coins
  8. 5-10Cherry Tomatoes Cut into Halves
  9. 1 TablespoonFresh Finely Chopped Dill Weed (1/4 teaspoon dried
  10. as NeededSalt and Cracked Black Pepper

Cooking Instructions

    Mix together the water, cider vinegar, and sugar. Set aside.

    Cut cucumbers up and layer in a plastic container. Sprinkling each layer of cucumbers, liberally with salt. Let cucumbers sit for 30-60 minutes at room temperature. Strain all the liquid from the cucumbers when ready. (We call this sweating the cucumbers. It helps to draw out any bitterness that the cucumbers may have.)

    Place cucumbers and all other vegetables together in a plastic container. Pour vinegar mixture over everything thing. Season with cracked black pepper and dill weed. No need to add any more salt. Keep salad refrigerated. Serve well chilled. Tastes even better the next day. Enjoy. Note: If using dried dill weed, only use 1/4 teaspoon.
