I don't like beetroot so what better way to consume it than in cake form! I think the recipe can be adapted to carrot as well.

Ingredients

  1. Dry ingredients
  2. 2 cupsflour
  3. 2 cupsbrown sugar
  4. 1 1/2 tspbaking powder
  5. Wet ingredients
  6. 3 cupsbeetroot
  7. 4eggs, well beaten
  8. 1 cupvegetable oil
  9. Optional
  10. Peanut butter
  11. Cranberries

Cooking Instructions

    Finely chop the beetroot
    TIP: I recommend lightly baking the beetroot prior to remove excess liquid, my cake was really moist so it took longer than expected to reach the desired "moistness"

    Mix the wet ingredients
    Then mix the dry ingredients

    Fold in the dry ingredients into the wet ingredients
    Make sure it is well mixed

  4. 4

    Prepare the cake tin and pour the batter
    Bake at 180°C for 1 hr
    Check with a toothpick if the cake is cooked through

  5. 5

    OPTIONAL:
    I added the cranberries to the batter
    Then when the cake was half cooked, I took some peanut butter and slotted it in (this was a rescue attempt as the cake was too wet and took more time to bake)
