Ingredients

  1. 3 largeeggs
  2. 1 1/2 cupgranulated sugar
  3. 2 tspvanilla extract
  4. 3/4 cupvegetable oil
  5. 1/4 cuphot water
  6. 2 cupcake flour
  7. 1 pinchsalt
  8. 1 tbspbaking powder
  9. 1 tspground cinnamon
  10. 1 pinchground nutmeg
  11. 2 cupfinely grated carrots
  12. 1 cupfinely grated beet
  13. 1/2 cupcoarsley chopped walnuts or pecan nuts (extra for decorating)
  14. 1Cream cheese frosting

Cooking Instructions

    Preheat oven to 375° F. Grease and flour 9" bundt pan.

    Separate eggs. Put yolks, sugar, water, vanilla and oil in electric mixer. Mix until just combined

    Sift flour, baking powder, salt and spices in a bowl.

    Add dry ingredients to wet ingredients

  5. 5

    Add carrots and beet. Mix until combined

  6. 6

    In a separate bowl, beat egg whites until stiff.

  7. 7

    Gently fold in egg whites.

  8. 8

    Pour into prepared cake pan. Bake for approximately 45 minutes until done.

    Allow to cool. Frost with your favourite cream cheese frosting and decorate with chopped nuts.
