Milk cake is also known as Alwar ka mawa which is a traditional Indian sweet prepared using milk, sugar and ghee. Alum powder or fitkari is used to split the milk and then the milk is reduced until it is thick like mawa. This sweet is time consuming but it is worth trying. Homemade milk cake turns out so delicious that you will definitely make it again. It is very easy but we have to be patient to prepare this sweet as it is prepared on low to medium heat and that is why it takes a lot of time. This delicious sweet can be prepared during festive season.

Ingredients

  1. 1.5 litreFull fat milk
  2. 3/4 tspalum powder
  3. 1 cupsugar
  4. 2 tbspghee
  5. As RequiredPista slivers to garnish

    First of all, take a small piece of alum and crush it to make a fine powder.

    Heat milk in a pan. When it starts boiling, reduce the heat to medium and keep on reducing until it remains little more than half. Now add alum powder to it and give it a good stir. Keep on stirring frequently while it is reducing. Keep on scraping dry milk from the side and putting it back into the milk.

    You can use a potato masher to break the uneven lumps and to get an even texture. Now add sugar to it and let it melt completely. When sugar water almost evaporates, add one tbsp ghee at a time and keep on mixing.

    Keep on reducing it until it looks almost dry and it gets a light golden colour.

    Now add the mixture to a greased tin and cover it with foil paper. Now cover the whole thing with a thick towel and leave it aside for 4 hours so that it keeps on cooking from inside and it will get a lovely colour.

    After 4 to 5 hours, demould it and cut it into the desired shape. This will give you around 20 pieces.

    Garnish it with pistachio slivers and rose petals. Store it in an air tight container for 4 to 5 days at room temperature.
