Delicious Onion Bacon Jam is one of my favorite ways to enhance a burger, top off a steak, pork chop and chicken. Eat it with cream cheese and crackers or a crusty piece of bread.
I quadrupled it for canning.

Ingredients

32 servings
  1. 1 poundthick cut bacon, chopped into 1inch pieces
  2. 4medium sweet onions, diced
  3. 4 clovesgarlic, minced
  4. 1/4 cupbalsamic vinegar
  5. 1/3cutbrown sugar or brown swerve or your choice
  6. 1 tablespoonswater

Cooking Instructions

    Add chopped bacon to large skillet. Cook over medium heat, stirring constantly, until bacon is crispy but still chewy. Be careful not to overcook.

    Transfer fully cooked bacon to colander and drain, save grease.

    Add diced onions to skillet with some reserved bacon grease. Stir well and cook until onions are caramelized. Add garlic to onions, stir well. * I drained the onions also, to reduce the amount of grease.

    Add balsamic vinegar, brown sugar, & water. Bring to a boil and stir well until sugar is melted. Add onions and bacon to skillet and stir to incorporate ingredients.

    Reduce heat to low. Cook mixture until jam has thickened. Taste and adjust flavoring; more sugar or some garlic salt, as needed. Once satisfied. Serve immediately or at room temperature with desired accompaniments. *I added a few shakes of garlic salt.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
