Ingredients

  1. 6-8Tomatillos - see pic
  2. 2medium size Avocados
  3. 2jalapeños or you can use green chillies
  4. 1 bunchcilantro/coriander
  5. 1 handfulmint leaves (OPTIONAL)
  6. 1large brown (or yellow) onion
  7. 1 TBSPchicken bouillon or seasoning
  8. 1generous pinch of Salt and pepper or to taste
  9. 2 1/2 TBSPlime juice
  10. 4garlic cloves

  12. 1. Add thickened or heavy cream for a very creamy version
  13. ✅️ NOTES
  14. 1. For a Tangy version, omit Avocado. And it's good on taco
  15. 2. Jalapeño or green chillies can be used interchangeably. Adjust the amount to your heat tolerance
  16. 3. Mints is added because we like a slightly minty taste
  17. 4. Start by adding 2 ½ TBSP of lime juice. Add more, later, if you like it slightly more tangy or sour
  18. 5. Instead of cooking this like how we do it here, you can oven roast the ingredients or boil them

Cooking Instructions

    Gather all ingredients. Wash mint leaves, if using.

    Wash Tomatillos. Prepare onion and garlic. See pic below for reference.

    Heat a pan or skillet. Add 1 or 2 TBSP of cooking oil. Once the oil is hot, add onion, Tomatillos & green chillies. You can add garlic now or later when you add water, it's very much a personal preference. Cook or pan roast until onion is soft and Tomatillos are lightly charred or roasted. Add 1 cup of water. Bring to good boil. Turn the heat off. Leave aside to cool.

    Halve your Avocados. Remove & discard the seed. Transfer cooked ingredients into a food processor once cooled or warm. Add Avocados, cilantro (or coriander), mints, chicken bouillon or chicken seasoning powder, good pinch of black or white pepper powder and lime juice. Process everything well for a minute. See pic below. Give it a taste. At this stage, you can adjust the consistency by adding a bit more water if you think it's too thick for your liking. You can also adjust the taste.

    Adjust the salt, lime and consistency as required. If and after you make the adjustments (or any adjustments), process it for a second time to make sure everything is well combined. Transfer to a bowl or bottle. Great on Tacos and with chips/crisps.
