Ingredients

15 mins
  1. 3 pintscherry tomatoes cut in half
  2. 2 cupssugar
  3. 1shallot minced
  4. 2 clovesgarlic minced
  5. 1 tspcrushed red pepper flakes
  6. to tastesalt and pepper
  7. 1/2fresh lemon
  8. tbspolive oil
  9. 3 leavesfresh basil minced or chiffonade

Cooking Instructions

    In a sauce pot heat up the olive oil and add your shallots and garlic and saute for about 1 min

  2. 2

    Then add your tomatoes, sugar, salt and pepper and crushed red pepper flakes

  3. 3

    Let that simmer for about ten minutes, pull off the heat and then add your chopped fresh basil and juice of half a lemon

  4. 4

    Chill for about an hour. This gets better as it sits and is best served chilled or room temp.

  5. 5

    Serve on your favorite fish, toast or even on goat cheese.
