This is something I serve on fish all the time. Goes great with scallops, salmon or any white flaky fish in general.

This is something I serve on fish all the time. Goes great with scallops, salmon or any white flaky fish in general.
Cooking Instructions

In a sauce pot heat up the olive oil and add your shallots and garlic and saute for about 1 min

Then add your tomatoes, sugar, salt and pepper and crushed red pepper flakes

Let that simmer for about ten minutes, pull off the heat and then add your chopped fresh basil and juice of half a lemon

Chill for about an hour. This gets better as it sits and is best served chilled or room temp.

Serve on your favorite fish, toast or even on goat cheese.
