Wash & chop cucumber & remove the seeds. Wash & cut tomato & scallions (spring onion) add into a bowl squeeze some lemon juice, add in salt & black pepper, add in the oil.

Toss every thing together & mix well then serve! Can be served with rice & stew, pasta or cous-cous, I serve mine with rice & beans😋😋😋 enjoy!!!

I substitute fresh coriander with spring onion but if you have that’s perfect as it the salad a distinctive taste👌 you can garnish with parsley or coriander.
