Firstly peel boiled potatoes 🥔 and mash them finely, add salt 🧂, red chillies / kashmiri red chillies powder 🌶️, coriander powder, finely chopped ginger & coriander leaves 🌿, coriander powder, Chaat masala, dry mango powder 🥭, finely chopped onions 🧅, mixed herbs, turmeric powder,1/2 tsp cumin seeds and mix well, keep aside, stuffing is ready.

Slit the peppers 🌶️ from top to the centre, so that it remains join from the bottom, remove seed and take one pepper and stuff the filling into it with the help of a 🥄 spoon, press gently, prepare all the peppers same way, keep aside.

Heat oil in a non- stick pan, add cumin seeds, asafoetida saute for few min, add stuffed peppers 🌶️ gently in the pan, cover and cook for 2 mins, on medium flame, open the lid and flip the peppers, cover again and cook for 1 min, peppers will be soft, uncover and cook for 2 mins, when peppers 🌶️ has becomes golden brown from all sides.

Serve hot with rice, Indian flat bread, etc. Garnish with chopped coriander leaves.
