Pasta with Spinach and Parmesan Cheese

I'm hooked on Parmesan cheese these days. Because I love the combination of parmesan and spinach, I tossed them into pasta. I made this with regular spinach, but try using "chijimi" spinach that's harvested during the cold seasons. Make this dish with delicious spinach!
To make sure the spinach doesn't overcook, work quickly from Step 3 onwards. I recommend you add lots of parmesan cheese and black pepper. This is a simple recipe to encourage you to make lots of different variations. How about adding mushrooms, bacon, anchovy, soft poached eggs, or nuts? For 1 serving. Recipe by Chefminii

Cooking Instructions
- 1
Roughly chop the spinach into bite sizes. Either slice or mince the garlic. Cook pasta al dente in plenty of salted water.
- 2
When the pasta has 3 minutes left, heat olive oil in a pan. Add garlic and fry over low heat until fragrant.
- 3
When fragrant, turn the heat to medium high. Cook the spinach stem briskly, then add the leaves to stir fry.
- 4
Add the cooked pasta into the frying pan from Step 3. If the pan seems too dry, add pasta water. Turn the heat off when the pasta seems to mix well with the spinach. Season with Parmesan cheese, salt, and pepper.

I made this because I searched for a recipe that I liked and I couldn't find one. You can make this recipe easily since there aren't any unusual ingredients or any overly complicated steps.Feel free to boil the spinach in water. The reason I mix the pepper with flour is because it goes well with a tuna and white sauce. However, if you want to use a different sauce, adjust the ingredients as necessary. Spinach and mushroom pasta Spinach and mushroom pasta
This dish was another special request from my mother, who saw something similar being cooked on TV and asked if I could make it. She failed to record the program and didn't take any notes, though, so all she remembered was that the dish was vegetarian and had mushrooms, spinach, and sour cream. The fact that she knew so little was actually a positive, as I only had to meet a handful of requirements and could otherwise do what I wanted. So I swapped out the sour cream for creme fraiche, for extra richness. And I added shallots and garlic, because I love how they work in cream sauces. And I crisped up a few slices of prosciutto, which I served on the side to meet the vegetarian condition, but would otherwise crumble on top. In the end, the dish turned out great. And it scored points with my family, which is always a nice bonus. Robert Gonzal
