Today we set a new record for weather in Chicago. Is -14 degrees.
Even though we have a Trader Joe's in my back yard, it is just too cold. I had a packet of frozen spinach so here we go.

Even though we have a Trader Joe's in my back yard, it is just too cold. I had a packet of frozen spinach so here we go.

Ingredients

2 servings
  1. 8 ozLinguine Pasta
  2. 2 TbsOlive oil
  3. 1 Tbskosher salt
  4. 2medium chopped tomatoes or 16 oz canned diced tomatoes
  5. 1 Tbscrushed Garlic
  6. 1ts crushed red pepper flakes
  7. 1/2 cupgrated parmasean or romano cheese
  8. 1/2 Lbfrozen spinach
  9. 1ts cumin seeds
  10. 1small chopped onion

Cooking Instructions

    Chop onions and Garlic.
    Boil 8 cups of water. Bring to rolling boil. Add 2 ts of salt and 1 tbs vegetable oil. Add Pasta boil 8 minutes.

    While the Pasta is boiling, Heat a Pan add 1 ts oil, add onion and garlicl, add cumin seeds, a pinch of salt. Cook 1 minute. Add chopped Tomatoes and cook until oil comes on top (about 10 mts) Add crushed red pepper.

    While your tomatoes are cooking, boil 1 cup water, bring to rolling boil, add frozen spinach cook 5 mts.

    Take a Bowl, Add drained Pasta, olive oil, cooked tomatoes and spinach. Mix it all together. Add Grated cheese and a few more crushed peppers and Enjoy.
