Ingredients

30 chicken wings
  1. 1 kgChicken wings
  2. 2 tbspbaking powder
  3. 3 tbspspring onions
  4. 1/2 tsppepper
  5. 1/2 tspsalt
  6. Sauce
  7. 1 pinchsalt
  8. 1 pinchpepper
  9. 4 tbspdark soy sauce
  10. 1 tspvegetable oil
  11. 1medium size minced ginger
  12. 2 tbsphoney
  13. 1 tbspsweet chili sauce
  14. 3 tbspbrown sugar
  15. 1 clovegalic (optional)

    Preheat the oven to 120C/250F and gently place a rack on a large baking tray.

    Wash your wings and carefully cut each wing at the joint so you have a mini wing and a drumette.

    Dry the wings with paper towels, then place in a large bowl and add the baking powder, salt and pepper. Toss to combine.
    It is important to dry the wings first before combining

    Place in a single layer on the rack, skin side. Its okay for the wings to touch each other.
    Carefully place on the lower shelf of the oven for 30 minutes.

    After 30 minutes, turn the oven up to 220c (425f), rotate the tray and place on a higher shelf (higher middle) in the oven for 45-50 minutes until the wings are golden and crispy. Take out of the oven to cool slightly.

    Put all of the sauce ingredients into a saucepan, mix together and bring to the boil.
    Allow to boil for 5-10 minutes until the sauce reduces and thickens slightly (it will thicken more as it cools).
    Turn off the heat.

    Carefully put the wings in a large bowl and very carefully pour over the sticky sauce. Be very careful doing this as it will be very hot. Mix together

    Serve with chopped spring onions as toppings
