Ingredients

4-6 servings
  1. 2-3Organic Raw Carrots (2 cups/ 100 g), Peeled and Julienned
  2. 2-3Celery Stalks (1 ½ cups/88 g), Rinsed and Julienned
  3. 1Medium Sized Raw Parsnip (1 ½ cups/ 86 g), Peeled and Julienned
  4. 1 Tablespoon(4 g/ 0.14 oz) of Fresh Dill, Chopped
  5. 1 Tablespoon(4 g/0.14 oz) Fresh Mint, Chopped
  6. 3 TablespoonsDried Unsweetened Cranberries
  7. 1/8 Teaspoonfreshly Ground Four Peppercorns, more to taste
  8. DRESSING:
  9. Freshly Squeezed Lemon Juice from 2 Medium Lemons (about 2-3 Tablespoons)

Cooking Instructions

  1. 1

    The trick is to start with the best carrots you can find.
    Peel carrots and parsnips, rinse and pat dry.

  2. 2

    Using a mandoline slicer, Julienne carrots, celery and parsnips.
    Add to a large bowl.

  3. 3

    Chop fresh dill and mint, add to a bowl.

  4. 4

    Add dried cranberries and black pepper.

  5. 5

    Drizzle with lemon juice, toss the salad, and enjoy!
