I bought buckwheat flour thinking I would make buckwheat flour galette, but I didn't have a chance to make it, and I made it into cookies.

Add soy milk a bit at a time as it will not mix well if you do it all at once. I like square cookies more so than round ones, so I shape into squares. Shape them how you like~ It's easy to tear the dough by hand and rolling into balls, so I recommend that method~ Buckwheat flour has lots of Rutin (flavanoids). Rutin is said to lower blood pressure. Ingredients

20 servings
  1. 50 gramsButter
  2. 20 gramsLight brown sugar (or sugar)
  3. 30 gramsHoney
  4. 1 dashSalt
  5. 20 mlSoy milk
  6. 120 gramsBuckwheat (soba) flour
  7. 10 gramsWhite sesame seeds

Cooking Instructions

    Bring butter to room temperature, whisk in a bowl until creamy. Add sugar and mix well until it becomes white and fluffy. Mix in the honey and salt as well.

    Add soy milk a little at a time (in 2~3 batches), and mix in. Stir in the buckwheat flour, and add white sesame as well. When it has all come together, take it out of the bowl, roll it into a cylinder (as thick as you like), and wrap in plastic wrap.

    Let it sit in the fridge for 30 minutes. Slice 0.5~0.7 cm thick after 30 minutes. Bake in an oven preheated to 340°F/170°C for about 20 minutes. Cool on the baking sheet after baking.
