Buckwheat flour is a gluten-free and healthy option for cookie lovers. Despite the term 'wheat' in it's name, buckwheat is not a grain and is no way related to wheat. It is actually a seed falls under the pseudo-grain category and is diet approved. Buckwheat flour is blackish brown in colour so it gives the cookies a distinctive colour.

Steps

In a bowl, whisk butter, brown sugar and white sugar until smooth.

Add in egg and vanilla extract and blend until creamy.

Sieve in buckwheat flour, salt and baking soda.

Mix thoroughly on a low speed and stir in the chocolate chips [1/2 cup], combine well.

Refrigerate for an hour, at least.

Pre-heat the oven to 350F.

Scoop in the dough onto a lined baking sheet and bake for 12-13 minutes.

Garnish with the rest of the chocolate chips and let it cool.

Notes: All the ingredients should be in room temperature. Instead of adding 1/4 cup of white sugar, you can use brown sugar.
