I love dan dan noodles!! I wanted to reproduce the taste of a restaurant I used to go to have dan dan noodles without using any meat. So I created this recipe based on a vegetarian recipe book.

You don't have to chop the dried shredded daikon into tiny pieces. But stir-fry it well. It's also delicious if you add some mushrooms in the ★ ingredients.
The amount of soup in this recipe is a little less than normal soup noodles. So if you want to have a generous amount of soup, increase the soup ingredients by about 1.5 times. For 2 servings. Recipe by Piyonofu

Ingredients

2 servings
  1. 2portions Chinese-style noodles
  2. Mock mincemeat ingredients:
  3. 20 grams★Kiriboshi daikon
  4. 4 small★Dried shiitake mushrooms
  5. 5 cm★The white part of a Japanese leek
  6. 1 tbsp★Sesame oil
  7. 1 dash★Soy sauce
  8. Soup:
  9. 300to 400 ml ◎Broth made from the dried shredded daikon and dehydrated shiitake mushroom
  10. 1/8◎Onion
  11. 1 smallpiece ◎Ginger
  12. Soup seasonings:
  13. 1 tbsp◆Sesame paste
  14. 1to 2 tablespoons ◆Miso
  15. 1 tsp◆Doubanjiang
  16. 1 tbsp♦Sake or mirin
  17. 1 tbsp◆Soy sauce
  18. 1 tbsp◆Vinegar
  19. 1◆Ground sesame seeds
  20. Toppings
  21. 1/3packet Bean sprouts
  22. 1Any greens or vegetables of your choice
  23. 1Green onions or radish sprouts

Cooking Instructions

    Prepare the mock mincemeat ingredients. Loosen the dried shredded daikon. Quickly rinse the dried shredded daikon and dried shiitake mushrooms, and soak in water.

    When they are rehydrated, finely chop them. Finely chop the Japanese leek as well.

    Heat the sesame oil in a frying pan, add the dried shiitake mushrooms, dried shredded daikon and Japanese leek in that order, and stir-fry slowly.

    When the dried shredded daikon has shrunk and everything has separated, season with soy sauce. Your mock mincemeat is ready.

    Start boiling water to cook the noodles and vegetables. When it has come to a boil, boil the bean sprouts and other topping vegetables.

    Make the soup. Combine the broth from the dried shredded daikon and dried shiitake mushrooms and chopped onion in a pot, and turn on the heat.

    When it comes to a boil, add the grated ginger, have a taste and season with the ♦ ingredients. Don't reduce the soup too much!

    Boil the noodles and transfer to a serving bowl. Add the topping vegetables from Step 5, mock meat from Step 4 and pour over the soup from Step 7. Sprinkle with chopped green onions or daikon sprouts, and it's done!

    Once the noodles are gone, add some rice into the soup. It's delicious.
