Ingredients

  1. 6large hard-boiled eggs, peeled
  2. 2/3 cup(about 1 medium-sized) carrot, finely grated
  3. 1/4 cupparmesan cheese, finely grated
  4. 2 tablespoonsgreen onions, green part only, thinly sliced
  5. 2 tablespoonsfresh parsley, finely chopped
  6. 2-3 tablespoonsavocado mayonnaise or regular mayonnaise
  7. 2 teaspoonsDijon mustard
  8. 1/4 teaspoonkosher salt, more to taste
  9. 1/8 teaspoonblack pepper, more to taste

Cooking Instructions

    Cut the hard-boiled eggs in half lengthwise.

  2. 2

    Remove the egg yolks and place yolks to a medium-sized bowl.

  3. 3

    Place the egg white halves onto an egg tray or platter.

  4. 4

    Use a fork to mash the egg yolks until there are no lumps.

  5. 5

    Using the fine side of a grater box, grate the carrot, and add it to a mixing bowl.

  6. 6

    Add parmesan cheese, fresh parsley, green onions, salt, black pepper, and paprika if in use. Mix in the mayonnaise, and Dijon mustard.

    Fill a piping bag with the yolk mixture and pipe the mixture into each egg white half. Alternatively, you can spoon the egg mixture into each egg white.

    Garnish with parsley, parmesan cheese, or sweet paprika.
    Cover and refrigerate until ready to serve. Enjoy!
