Tarragon Deviled Eggs

This one is this year's homage to my dad, who LOVES anything tarragon. It's quite a simple recipe, but oh so tasty! Plus, it helps you when you have unexpected guests (and aren't we all wishing to have guests over, expected or not, at this point in time?) #dadsfaves

Ingredients

20 minutes
8 hors d'oeuvres
  1. 4hard-boiled eggs
  2. 2 tbspmayonnaise (fresh is better, but store-bought works fine)
  3. 1minced garlic clove
  4. 1/2 tspdried tarragon or, if you're lucky (I wasn't), freshly chopped

Cooking Instructions

    If you just boiled the eggs, let them cool down first. Peel them carefully and cut them in half lengthwise. Carefully scoop out the yolks.

    Combine the yolks with mayonnaise, garlic, and tarragon. Mix with a fork until you get a smooth, creamy paste.

    Scoop the mixture back into the egg whites, sprinkle with additional tarragon if desired. Voilá!

Omg, so cool, first time I’m seeing anyone other than an Armenian to pair tarragon with eggs. That is what we eat on Easter- hard boiled eggs, wrapped with tarragon spring and butter in a traditional Armenian lavash bread.
