This is an easy dish to whip up quickly for a weeknight dinner. It is flavorful, and also feels just a little bit fancy. You can add more heat by increasing the amount of red pepper flakes, and/or you could sprinkle it with a little Parmesan cheese when you serve it.

Ingredients

  1. 3/4 lblinguine
  2. 1 lbuncooked shrimp
  3. 3 Tablespoonsunsalted butter
  4. 2 Tablespoonsolive oil
  5. 4 clovesgarlic, minced (about 1.5 Tablespoons)
  6. 1/4 cuplemon juice (from about 2 lemons)
  7. 1/2lemon, zested
  8. 1/3 cupchopped parsley
  9. 1 teaspoonkosher salt (or 3/4 teaspoon table salt)
  10. 1/4 teaspoonfreshly ground black pepper
  11. 1/8 teaspoonred pepper flakes (Optional)
  12. 3 Tablespoonswhite wine (Optional)

Cooking Instructions

    Rinse the shrimp, then remove their shells and devein them.

    Prepare all of the other ingredients so that they are ready to use. Once you start cooking, things will move quickly and you need to have everything at hand.

    Cook the linguine al dente in salted water according to package directions.

    While the linguine cooks, melt the butter and olive oil in a large skillet over medium-low heat. Add the minced garlic and fry for about one minute.
    Optional: you may add a splash of white wine at this point.

    Add the shrimp and cook for about five minutes, or until the shrimp are pink and fully cooked.

    Remove from heat.
    Add the lemon zest, lemon juice, chopped parsley, salt, and pepper.
    You may also add the red pepper flakes at this point if you want the dish to be a little spicier.

    Drain the linguine, and return it to the pot. Add the cooked shrimp and all of the sauce. Toss everything together gently, and serve immediately.
