🥪 Tofu Sandwich 🥪

This tofu sandwich is inspired by the classical Bàhn Mí Vietnamese sandwich.
There was a Vietnamese restaurant near my old job that I would often go to during my lunch break to indulge in delicious Pho or Bàhn Mí sandwiches. Their food and service was superb, and it quickly became my favorite spot. Even though I don’t work near there anymore, I still order from them occasionally to savor their authentic Vietnamese food.
Although the original Bàhn Mí Sandwich is popular for its airy yet crunchy bread, it can easily be recreated with a French baguette. I didn’t pickle the carrots or cucumber because of personal preference but you can if you wish to give it a more authentic touch.
Not only is this sandwich delicious, it’s filled with flavor and protein. It’s suitable for anyone following a vegan diet (just omit butter ) and it can be put together in a jiffy!

Steps

Assemble all ingredients. Put tofu in a tofu presser or under a heavy object to extract the moisture (10 minutes)

In the meantime, assemble other ingredients and preheat oven or toaster to 350°F. Cut up a 6 inch baguette.

After the tofu has been pressed, in a nonstick pan add 1 tbsp of olive oil and sauté tofu until golden (3-4 min per side).

Add 2 tbsp of soy sauce and cook for another 2 min per side until it has absorbed most the soy sauce and it has browned. Remove from heat and set side

Put bread in the oven to warm for 3-4 minutes. After, spread softened butter on both sides, and add tofu.

Assemble remaining ingredients. First carrots, then cucumber, cilantro and finally a pinch of black pepper.

Serve along some chips or fries. Yum 😋
