Thought I would try this one out. Co worker told me about it. But I happen to love my crust with coconut in it so… look to the optional for pie crust at the end.

Ingredients

  1. 2 cupsgraham cracker crumbs
  2. 3/4 teaspoonground cinnamon
  3. 1 stick (8 tablespoons)salted butter, melted
  4. 4large egg yolks
  5. 1 (14 ounce)can sweetened condensed milk
  6. 1 tablespoonlime zest + 3/4 cup lime juice (I used 2 limes for the zest)
  7. 2 teaspoonvanilla extract
  8. 1/4 teaspoonvanilla bean powder (optional)
  9. 1/4 teaspoonkosher salt
  10. whipped cream, for serving

    Preheat the oven to 350 degrees F.

    In a bowl, mix the graham cracker crumbs, cinnamon, and butter until combined. Press the mix into a deep-dish 9-inch pie plate. Transfer to the oven and bake until toasted, about 8 minutes.

    Meanwhile, whisk the 4 egg yolks in a medium bowl until smooth. Add the sweetened condensed milk, lime zest, lime juice, vanilla, vanilla bean powder (if using), and salt. Whisk to thoroughly combine. Carefully pour the mix into the baked crust.

    Transfer to the oven and bake for 13-14 minutes, until just set on top. Let the pie cool slightly, then cover and chill in the fridge until set, at least one hour.

    Serve the pie topped with whipped cream and additional lime zest.

    Optional crust recipe: In a bowl, mix the 1 cup graham cracker crumbs, 1 cup shredded coconut and butter until combined. Press the mix into a deep-dish 9-inch pie plate. Transfer to the oven and bake until toasted, about 8 minutes.
