Original recipe from Eagle Brand. I switched it up by using a vanilla cream sandwich cookie crumb crust, fresh key lime juice and zest. A bit tedious but well worth the work.

Ingredients

  1. 1For the Key Lime Pie

  3. 1**Note... For my version I use vanilla cream sandwich cookie crust (in my profile)
  4. 1*** I use fresh squeezed key lime juice
  5. 1****I zest some key limes and add about 1-2 tablespoons into the pie and reserve some for garnish
  6. 1Eagle Brand classic version
  7. 14 ozsweetened condensed milk
  8. 4egg yolks lightly beaten
  9. 1/2 cupkey lime juice
  10. 19" ready made graham cracker pie crust

Cooking Instructions

    Preheat oven to 350

  2. 2

    In large bowl mix sweetened condensed milk and egg yolks on low speed. Do not over mix. Slowly add key lime juice and mix on low speed till ingredients are well mixed. *** fold in 1-2 TB key lime zest if desired.

    Cover edges of pie crust with pie crust shield or foil so edges don't burn. Pour mixture into desired pie crust and bake on 350 till no longer jiggly and toothpick comes out clean.

    Chill and serve with whipped cream. Garnish with left over zest if desired.
