Ingredients

  2. 50 gramsKorean yuzu sauce
  3. 80 gramssugar
  4. 100 gramsvinegar
  5. 3/4 cupwater (200 grams)
  6. 1 teaspoonsalt (to draw out moisture from the daikon)
  7. 2 teaspoonssugar (to draw out moisture from the daikon)

    Wash the daikon radish, peel it, and cut it in half. Use a peeler to slice it into thin strips. Once all the strips are ready, place them in a plastic bag, add salt and sugar, and gently massage. Let it sit for 15 minutes to draw out moisture from the daikon, then drain the liquid and squeeze the daikon dry. Mix the yuzu sauce, sugar, vinegar, and water in a pot and stir until the sugar dissolves. Add the squeezed daikon strips.
