Wash the daikon radish, peel it, and cut it in half. Use a peeler to slice it into thin strips. Once all the strips are ready, place them in a plastic bag, add salt and sugar, and gently massage. Let it sit for 15 minutes to draw out moisture from the daikon, then drain the liquid and squeeze the daikon dry. Mix the yuzu sauce, sugar, vinegar, and water in a pot and stir until the sugar dissolves. Add the squeezed daikon strips.

Place the pickled sweet and sour daikon strips in an airtight container. Take out as much as you want to eat. This simple, affordable, and appetizing side dish is ready to enjoy.
