Ham and Sweet Pea Creamy Pasta

I wasn't going to share this one because my pictures uploaded blurry but this is too good not to share. This is so easy to make, it's quick and delicious. Even my kids, who don't enjoy sweet peas, request this about once a month. I like to remind everyone that I cook for a big family so recipe may need to be halved.

Ham and Sweet Pea Creamy Pasta

Ingredients

  1. 2pds Linguine
  2. Fully cooked boneless halved ham
  3. 1pd frozen sweet peas
  4. 1 1/2 cfresh parmesan cheese
  5. 1 qtheavy cream
  6. 1diced onion
  7. 5 clovesminced garlic
  8. Salt and pepper to taste
  9. 1even tbs Italian seasoning
  10. Garlic and onion powder (opinional)
  11. 4 tbsbutter

Cooking Instructions

    Cut ham into 1/4 inch slices > cut slices into thin strips. You want them thin enough to bend with the pasta but not so thin they break during cooking.

    Heat butter in heavy bottomed pot or non-stick > add ham slices and cook on medium heat until strips start to get a little golden sear

  3. 3

    Add onion and saute for a few minutes until they take on the color of the sear and are translucent

  4. 4

    Add garlic and saute until fragrant (about 2 or 3 minutes)

    Turn heat to low and add cream > stir well with a wooden spoon, being sure to get any sear left on the bottom of the pot > cover with low heat > stir every few minutes while you make your pasta

    Fill pot with water and prepare pasta according to package instructions

  7. 7

    When pasta is done add one cup of pasta water to sauce

    Add 1 cup of the parmesan. Stir and let cook for two minutes or until cheese is incorporated. Take off heat and serve over pasta with left over parmesan dressed on top.
