Cooking Instructions

Separate the lettuce leaves, wash, dry thoroughly and refrigerate.

Lightly grill or fry (in good fresh oil) the croutons on all sides.
To bake in the oven (180C, 7-9 minutes). - 3
To make the dressing:
1. Make a paste of garlic and anchovies.
2. On a bowl whisk the yolks, dijon mustard, red wine vinegar. Very very slowly pour and whisk the olive oil until emulsify. Add the garlic and anchovies paste.
3. Finaly grate the parmesan and mix all together. - 4
Break the lettuce into serving-sized pieces and place into a salad bowl.

Cook the bacon on a pan until very crispy.

Scatter the croutons on top and serve.

Healthy eating TIPS:
No added salt is needed, anchovies and cheese are high in salt.
Serve and eat immediately because the dressing is made with fresh eggs.
