This is the recipe I settled on after experimenting with the proportion of ingredients.

This is the recipe I settled on after experimenting with the proportion of ingredients.

Ingredients

3 servings
  1. 50 gramsDried young sardines (or anchovies)
  2. 1Roasted sesame seeds
  3. 2 tbspSugar
  4. 2 tbspMirin
  5. 1and 1/2 tablespoon Soy sauce

Cooking Instructions

    Dry roast the dried young sardines over low heat for about 10 minutes (until they are crisp).

    Transfer to a colander to strain to remove the broken bits.

  3. 3

    Boil the seasoning ingredients; at first, tiny bubbles will form.

  4. 4

    Boil until large bubbles start to appear.

  5. 5

    Turn off the heat, add the dried young sardines, then coat in the sauce.

  6. 6

    Transfer to a tray lined with parchment paper, sprinkle on some toasted sesame seeds, then serve.
