Trying to recreate a dish served at Egg Shop NYC in New York…. It came out as good as the one served at the restaurant.

Ingredients

1 person
  1. Butter
  2. 2-3eggs
  3. 1 scoopricotta
  4. Sliced bread, like sourdough
  5. Kosher salt and freshly ground pepper
  6. Truffle oil
  7. Pecorino, finely shredded
  8. Red pepper flakes
  9. Chives, finely chopped
  10. Microgreens

Cooking Instructions

10 minutes

    Beat eggs.

  2. 2

    Melt 1/2 tablespoon of butter on non-stick frying pan. Pour beaten eggs on pan. Add ricotta and stir vigorously over high heat.

    Transfer egg omelette to a toast. Sprinkle salt and pepper. Drizzle some truffle oil.

  4. 4

    Sprinkle pecorino, pepper flakes and chives. Top with microgreens. Serve.
